A chocolatey, coconut-y, delicious cake! And the best part is it’s single serving, and takes under 2 minutes to cook! Not to mention it’s vegan. This recipe is also sugar free, with real sugar option.
So with this healthy, tasty, easy to make cake, what are you still doing here? Go, make it already!
Chocolate Coconut Mug Cake
1/4 cup oats (I use Coach’s Oats)
1 Tbsp flax seed (you could use an egg white too)
1 tablespoon cocoa powder
3 tablespoons unsweetened coconut flakes, or shredded coconut
2 tablespoons xylitol (sweetener or sugar, use one Tbsp for a muffin)
1/3 teaspoons vanilla extract
1/4 cup + 1 tablespoon (5 Tbsp) milk of choice (I used unsweetened Silk almond milk)
- Throw ingredients in a mug, and mix.
- Microwave! Start with 1:30, and add more time as needed. Mine took 1:50.
- That’s it! Enjoy!
I used this coconut, because I ran out of my unsweetened low-fat shredded coconut.
